Copycat Crumbl Biscoff Ice Cream Cookie

Ingredients

Cookie Base

  • ½ cup butter
  • ¾ cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 ½ cups flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon

Biscoff Cream Topping

  • ½ cup heavy cream
  • ¼ cup Biscoff spread
  • 2 tbsp powdered sugar

Garnish

  • crushed Biscoff cookies

Instructions

1. Make dough

Cream butter and sugar.

Add egg and vanilla.

Mix in flour, baking soda, salt, and cinnamon.

2. Bake

Bake at 350°F for 10–12 minutes.

Cool completely.

3. Make topping

Whip heavy cream, powdered sugar, and Biscoff spread until smooth and fluffy.

4. Assemble

Spread topping over cookie and sprinkle crushed Biscoff.

Tips

  • Keep topping light, not dense like frosting
  • Add extra Biscoff drizzle if you want stronger flavour
