Copycat Crumbl Peppermint Ice Cream Cookie
Ingredients
Chocolate Cookie
- ½ cup butter
- ¾ cup sugar
- 1 egg
- 1 tsp vanilla
- ½ cup cocoa powder
- 1 cup flour
- ½ tsp baking soda
- ½ tsp salt
Peppermint Cream
- 1 cup heavy cream
- 2 tbsp powdered sugar
- ½ tsp peppermint extract
Topping
- crushed candy canes
Instructions
1. Make dough
Cream butter and sugar.
Add egg and vanilla.
Mix in cocoa powder, flour, baking soda, and salt.
2. Bake
Bake at 350°F for 9–11 minutes.
Cool completely.
3. Make topping
Whip cream, powdered sugar, and peppermint extract until soft peaks form.
4. Assemble
Top cookies with cream and crushed candy canes.
Tips
- Go light on peppermint extract — it’s strong
- Add candy cane after topping to keep crunch
