Copycat Crumbl Vanilla Bean Cupcake Cookie

Ingredients

Cookie

  • ½ cup butter
  • ¾ cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp vanilla bean paste
  • 1 ½ cups flour
  • ½ tsp baking powder
  • ½ tsp salt

Frosting

  • ½ cup butter
  • 2 cups powdered sugar
  • 1 tsp vanilla bean paste
  • 2 tbsp cream

Instructions

1. Make dough

Cream butter and sugar.

Add egg, vanilla, and vanilla bean paste.

Mix in flour, baking powder, and salt.

2. Bake

Bake at 350°F for 10–12 minutes.

3. Frost

Beat frosting ingredients until fluffy and spread over cooled cookies.

Tips

  • Vanilla bean paste gives authentic flavour
  • Keep cookie soft, not browned
