Copycat Crumbl New York Cheesecake Cookie

Ingredients

Cookie Base

  • ½ cup butter
  • ¾ cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 ½ cups flour
  • ½ tsp baking powder
  • ½ tsp salt

Cheesecake Topping

  • 8 oz cream cheese
  • ½ cup sugar
  • 1 egg
  • 1 tsp vanilla

Optional Garnish

  • graham crumbs

Instructions

1. Make base

Cream butter and sugar.

Add egg and vanilla.

Mix in flour, baking powder, and salt.

2. Bake base

Bake at 350°F for 8–10 minutes.

3. Make topping

Beat cream cheese, sugar, egg, and vanilla until smooth.

4. Finish baking

Add topping and bake another 8–10 minutes.

Tips

  • Chill after baking for best texture
  • Don’t overbake cheesecake layer
