Copycat Crumbl Blueberry Cheesecake Cookie
Ingredients
Cookie Base
- ½ cup butter
- ¾ cup sugar
- 1 egg
- 1 tsp vanilla
- 1 ½ cups flour
- ½ tsp baking powder
- ½ tsp salt
Cheesecake Topping
- 8 oz cream cheese
- ½ cup sugar
- 1 egg
- 1 tsp vanilla
Blueberry Topping
- 1 cup blueberries
- ¼ cup sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch
Instructions
1. Make cookie base
Cream butter and sugar.
Add egg and vanilla.
Mix in flour, baking powder, and salt.
Bake at 350°F for 8–10 minutes.
2. Make cheesecake layer
Beat cream cheese, sugar, egg, and vanilla until smooth.
Add to partially baked cookies and return to oven for 8–10 minutes.
3. Make blueberry topping
Cook blueberries, sugar, and lemon juice until softened.
Add cornstarch and cook until thick.
Cool completely.
4. Assemble
Top cookies with blueberry mixture.
Tips
- Chill cookies after baking for best texture
- Use fresh or frozen blueberries (thawed)
