Copycat Crumbl Raspberry Cheesecake Cookie

Ingredients

Cookie Base

  • ½ cup butter
  • ½ cup brown sugar
  • ¼ cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 ¼ cups flour
  • ¼ cup graham cracker crumbs
  • ½ tsp baking powder
  • ¼ tsp salt

Cheesecake Layer

  • 8 oz cream cheese
  • ¼ cup sugar
  • 1 tsp vanilla

Raspberry Topping

  • ½ cup raspberry preserves

Instructions

1. Make dough

Cream butter and sugars.

Add egg and vanilla.

Mix in flour, graham crumbs, baking powder, and salt.

2. Bake

Flatten cookies slightly.

Bake at 350°F for 10–12 minutes.

Cool completely.

3. Make cheesecake layer

Beat cream cheese, sugar, and vanilla until smooth.

4. Assemble

Spread cheesecake layer on cookies.

Top with raspberry preserves.

Tips

  • Use thicker raspberry preserves for clean layers
  • Chill before serving for best texture
  • Don’t overload topping to avoid sliding
