Copycat Crumbl Buckeye Brownie Cookie

Ingredients

Brownie Cookie Base

  • ½ cup butter (melted)
  • ¾ cup sugar
  • 1 egg
  • 1 tsp vanilla
  • ½ cup cocoa powder
  • ¾ cup flour
  • ¼ tsp salt

Peanut Butter Layer

  • ½ cup creamy peanut butter
  • ¼ cup powdered sugar

Chocolate Topping

  • ½ cup chocolate chips
  • 2 tbsp heavy cream

Instructions

1. Make brownie dough

Mix melted butter and sugar.

Add egg and vanilla.

Stir in cocoa powder, flour, and salt.

2. Bake

Scoop cookies and bake at 350°F for 10–12 minutes.

Cool completely.

3. Make peanut butter layer

Mix peanut butter and powdered sugar until smooth.

Spread over cookies.

4. Add chocolate topping

Melt chocolate with cream until smooth.

Spread or drizzle over peanut butter layer.

Tips

  • Chill peanut butter layer before adding chocolate
  • Slight underbake keeps cookie fudgy
  • Use good-quality cocoa for richer flavour
