Copycat Crumbl Strawberry Biscoff Cookie
Ingredients
Cookie Base
- ½ cup butter (softened)
- ¾ cup brown sugar
- ¼ cup sugar
- 1 egg
- 1 tsp vanilla
- 1 ½ cups flour
- ½ tsp baking soda
- ½ tsp salt
Biscoff Layer
- ½ cup Biscoff spread
Strawberry Topping
- ½ cup strawberry preserves (thick)
Instructions
1. Make dough
Cream butter and sugars until smooth.
Add egg and vanilla.
Mix in flour, baking soda, and salt until a soft dough forms.
2. Bake
Scoop and slightly flatten cookies.
Bake at 350°F (175°C) for 10–12 minutes.
Cool completely.
3. Assemble
Spread a layer of Biscoff over cookie.
Top with strawberry preserves.
Tips
- Use thicker preserves so layers stay clean
- Slight underbake keeps cookie soft
- Warm Biscoff slightly for easier spreading
