Copycat Crumbl Strawberry Biscoff Cookie

Ingredients

Cookie Base

  • ½ cup butter (softened)
  • ¾ cup brown sugar
  • ¼ cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 ½ cups flour
  • ½ tsp baking soda
  • ½ tsp salt

Biscoff Layer

  • ½ cup Biscoff spread

Strawberry Topping

  • ½ cup strawberry preserves (thick)

Instructions

1. Make dough

Cream butter and sugars until smooth.

Add egg and vanilla.

Mix in flour, baking soda, and salt until a soft dough forms.

2. Bake

Scoop and slightly flatten cookies.

Bake at 350°F (175°C) for 10–12 minutes.

Cool completely.

3. Assemble

Spread a layer of Biscoff over cookie.

Top with strawberry preserves.

Tips

  • Use thicker preserves so layers stay clean
  • Slight underbake keeps cookie soft
  • Warm Biscoff slightly for easier spreading
