Copycat Recipe: Crumbl Carrot Cake Cookie
Ingredients
Cookie Base
- 1½ cups flour
- ½ cup brown sugar
- ½ cup butter (softened)
- 1 egg
- ½ cup finely grated carrots
- 1 tsp cinnamon
- ½ tsp baking soda
- ½ tsp salt
Cream Cheese Frosting
- 4 oz cream cheese (softened)
- ¼ cup butter
- 1 cup powdered sugar
- ½ tsp vanilla
Instructions
1. Make dough
Cream butter and sugar.
Add egg and mix.
Stir in carrots.
2. Add dry ingredients
Mix in flour, cinnamon, baking soda, and salt.
3. Shape
Form thick cookies.
4. Bake
Bake at 350°F (175°C) for 10–12 minutes.
5. Make frosting
Mix cream cheese, butter, powdered sugar, and vanilla until smooth.
6. Frost
Let cookies cool, then spread frosting on top.
Tips
- Use finely grated carrots for better texture
- Let cookies cool fully before frosting
- Chill frosting slightly for better spread
- Don’t overbake — keep cookies soft
