Copycat Recipe: Confetti Cake Batter Cheesecake Cookie
Ingredients
Cookie Base
- 1½ cups flour
- ½ cup butter
- ¾ cup sugar
- 1 egg
- 1 tbsp vanilla
- ½ tsp baking powder
- ¼ cup sprinkles
Cheesecake Topping
- 4 oz cream cheese
- ¼ cup sugar
- ½ tsp vanilla
Instructions
1. Make dough
Cream butter and sugar.
Add egg and vanilla.
Mix in flour and baking powder.
Fold in sprinkles.
2. Shape
Form thick cookies.
3. Bake
Bake at 350°F (175°C) for 10–12 minutes.
4. Make topping
Mix cream cheese, sugar, and vanilla until smooth.
5. Assemble
Top cooled cookies with cheesecake layer.
Tips
- Don’t overbake — keep soft
- Chill topping for easier spreading
- Use high-quality vanilla
- Add sprinkles after baking for extra look
