Copycat Crumbl Caramel Pumpkin Cake Cookie

Spiced, Soft, and Fall-Inspired

Ingredients

Cookie base:

  • 1 cup butter
  • 1 cup brown sugar
  • ½ cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 cup pumpkin purée
  • 2 ½ cups flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp pumpkin pie spice

Topping:

  • ½ cup caramel sauce
  • 1 cup streusel crumbs (graham crackers + butter + sugar)

Instructions

  1. Cream butter + sugars. Add eggs, vanilla, pumpkin.
  2. Fold in dry ingredients + spice.
  3. Scoop and bake 350°F for 10–12 min. Cool.
  4. Top with caramel drizzle + streusel.

Velvet Fork Twist

  • Mix ½ tsp ginger into the streusel for a little extra snap to balance the pumpkin.
