Copycat Crumbl Triple Berry Shortcake 

Fresh, fruity, and light — a soft shortcake-inspired base topped with cream and a cascade of sweet berries.

Ingredients (12 cookies)

Cookie

1 cup unsalted butter, softened 1 cup sugar 1 egg + 1 yolk 2 tsp vanilla 2 ½ cups flour 2 tsp cornstarch ½ tsp baking soda ½ tsp salt

Topping

1 cup heavy whipping cream 3 tbsp powdered sugar ½ tsp vanilla 1 cup mixed berries (strawberries, raspberries, blueberries)

Instructions

Preheat oven 350°F. Cream butter + sugar. Add egg, yolk, vanilla. Mix flour, cornstarch, baking soda, salt. Add in. Scoop ¼-cup dough, bake 9–11 minutes. Cool. Whip cream, sugar, vanilla until stiff. Spread on cookies. Top with fresh berries.

Pro Tips

Dry berries well before topping to prevent bleeding. Use mascarpone folded into whipped cream for extra richness.
