Copycat Crumbl Brookie Cookie

Half brownie, half chocolate-chip cookie — all indulgence. This version nails the dense, fudgy chew of the brownie with the buttery sweetness of a classic cookie in perfect balance.

Ingredients

Brownie Dough

½ cup butter, melted

¾ cup brown sugar

¼ cup white sugar

1 egg + 1 yolk

1 tsp vanilla

¾ cup cocoa powder

½ tsp salt

½ tsp baking powder

1 cup flour

Cookie Dough

½ cup butter, softened

½ cup brown sugar

¼ cup white sugar

1 egg

1 tsp vanilla

1½ cups flour

½ tsp baking soda

½ tsp salt

¾ cup chocolate chips

Instructions

Preheat oven to 350°F. Line baking tray.

Make each dough separately.

Roll 1 tbsp of each dough and press together. Slightly flatten so you see both sides.

Bake 11–13 minutes until just set.

Cool before moving — they’re soft!

Tips & Notes

Sprinkle a pinch of flaky salt on top before baking for extra contrast.

Chill doughs 15 min before baking if they’re too sticky.
