Crumbl Review : Blueberry Pancake Cookie
The Blueberry Pancake Cookie is one of those Crumbl releases that immediately tells you what it wants to be — warm, soft, nostalgic, comforting — and in a lot of ways, it does manage to hit that feeling. But it also has one big structural flaw that keeps it from being the standout it easily could have been.
Visually, it absolutely nails the pancake theme. It looks fluffy, golden, soft, and has that slightly domed shape that makes you think of a thick-but-not-too-thick stack of pancakes. The topping gives you the impression of syrup, cream, and a pocket of blueberry compote, even though the blueberry really only appears in the center.
The first bite is exactly what you want: soft. Not Crumbl soft in the “underbaked goo” way — genuinely pancake-soft. Light, airy, spongy, exactly how a pancake-textured cookie should be. And the flavour is unmistakably pancake too — buttery, warm, slightly sweet but not sugary, with that mellow breakfast profile.
But here’s where the cookie runs into problems:
the blueberry is only in the middle, and the cookie is so soft that it basically falls apart before you can get a truly balanced bite.
The center bites, where the blueberry is strong, are amazing. The blueberry compote is flavourful without being artificial, juicy without being runny, and bright enough to cut through the richness of the cookie. If the entire cookie had that level of blueberry throughout, this would be an absolute winner — maybe one of the best breakfast-inspired Crumbl cookies.
But the outer portions of the cookie?
They’re just pancake.
Good pancake, yes — warm, soft, and comforting — but once you’ve had that burst of blueberry in the center, the plain bites feel like something is missing. You can tell where the cookie shines and where it falls flat.
Texture-wise, it is incredibly soft. Almost too soft. Soft enough that the cookie struggles to hold its shape and tends to collapse the moment you break into it. Normally I love a soft cookie — but here the softness makes it harder to enjoy because it lacks the structure needed to hold the topping and filling together.
The icing on top is subtle and nice — sweet, smooth, and reminiscent of pancake syrup mixed with light vanilla. It doesn’t overpower anything, which is good, but it also can’t compensate for the uneven blueberry distribution.
Overall, the cookie has a lot of potential and genuinely wonderful moments, especially in the center. The blueberry portion is rich, sweet, bright, and exactly what you want. But the imbalance between the blueberry-filled bites and the plain pancake bites is noticeable, and the softness can be a little too much, especially when the cookie starts falling apart in your hands.
Would I get it again?
Yes — but knowing I’ll enjoy half of it a lot more than the other half.
If Crumbl ever distributes the blueberry more evenly, this could easily be a top-tier dessert.
