Copycat Starbucks Molasses Cookie

Soft, warm, lightly spiced, and deeply cozy — this homemade version captures the gentle ginger-molasses flavour and melt-in-your-mouth texture perfectly.

Ingredients (8 cookies)

1 ¼ cups flour

1 tsp baking soda

½ tsp ginger

½ tsp cinnamon

¼ tsp cloves

Pinch salt

⅓ cup butter, softened

½ cup brown sugar

¼ cup molasses

1 egg

¼ cup white sugar (for rolling)

Instructions

Preheat oven to 350°F.

Cream butter + brown sugar. Add egg + molasses.

Mix dry ingredients in a separate bowl.

Combine wet and dry.

Roll dough into balls and coat in white sugar.

Bake 8–10 minutes until soft and crackled.

Tips

Underbake slightly for a softer center.

Add 1 tbsp extra molasses for deeper flavour.
