Copycat Crumbl Benson Boon’s Moonbeam Ice Cream Cookie
The real one missed depth, so this copycat fixes it — creamy vanilla topping with salted cocoa base to give contrast and punch.
Ingredients
Cookie Base
¾ cup butter, melted
½ cup brown sugar
½ cup white sugar
1 egg + 1 yolk
1 tsp vanilla
2 cups flour
¾ cup cocoa powder
½ tsp salt
½ tsp baking powder
Icing
½ cup butter, softened
2 cups powdered sugar
2 tbsp milk or cream
½ tsp vanilla extract
Pinch of salt
Instructions
Preheat oven to 350°F.
Mix wet and dry separately; combine.
Scoop 3 tbsp dough balls and flatten.
Bake 11–12 min. Cool fully.
Beat icing until fluffy, pipe over top.
Tips & Notes
Add a pinch of espresso powder to your cookie dough for depth.
Sprinkle coarse sea salt on the icing to cut sweetness.
