Copycat Crumbl Biscoff Ice Cream Cookie

Sweet, Spiced, and Creamy

Ingredients

Cookie base:

  • 1 cup butter, softened
  • 1 cup brown sugar
  • ½ cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 ¼ cups flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup crushed Biscoff cookies

Icing:

  • ½ cup butter, softened
  • 4 oz cream cheese
  • 1 ½ cups powdered sugar
  • ½ cup Biscoff spread

Instructions

  1. Make dough, fold in crushed Biscoff cookies. Bake 350°F for 10–12 min. Cool.
  2. Beat butter + cream cheese until smooth. Add powdered sugar + Biscoff spread.
  3. Frost cookies generously once cooled.

Velvet Fork Twist

  • Fold a spoonful of vanilla ice cream into the frosting before spreading. It lightens the texture and nods to the “ice cream” name.
