Copycat Crumbl Biscoff Ice Cream Cookie
Sweet, Spiced, and Creamy
Ingredients
Cookie base:
- 1 cup butter, softened
- 1 cup brown sugar
- ½ cup sugar
- 2 eggs
- 2 tsp vanilla
- 2 ¼ cups flour
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ¾ cup crushed Biscoff cookies
Icing:
- ½ cup butter, softened
- 4 oz cream cheese
- 1 ½ cups powdered sugar
- ½ cup Biscoff spread
Instructions
- Make dough, fold in crushed Biscoff cookies. Bake 350°F for 10–12 min. Cool.
- Beat butter + cream cheese until smooth. Add powdered sugar + Biscoff spread.
- Frost cookies generously once cooled.
Velvet Fork Twist
- Fold a spoonful of vanilla ice cream into the frosting before spreading. It lightens the texture and nods to the “ice cream” name.
