Copycat Crumbl Caramel Pumpkin Cake Cookie
Spiced, Soft, and Fall-Inspired
Ingredients
Cookie base:
- 1 cup butter
- 1 cup brown sugar
- ½ cup sugar
- 2 eggs
- 2 tsp vanilla
- 1 cup pumpkin purée
- 2 ½ cups flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 tsp pumpkin pie spice
Topping:
- ½ cup caramel sauce
- 1 cup streusel crumbs (graham crackers + butter + sugar)
Instructions
- Cream butter + sugars. Add eggs, vanilla, pumpkin.
- Fold in dry ingredients + spice.
- Scoop and bake 350°F for 10–12 min. Cool.
- Top with caramel drizzle + streusel.
Velvet Fork Twist
- Mix ½ tsp ginger into the streusel for a little extra snap to balance the pumpkin.
