Copycat Crumbl Chocolate Peanut Butter Sandwich Cookie

Ingredients (makes 6 sandwich cookies)
Cookie base:
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- ½ cup sugar
- 2 eggs
- 2 tsp vanilla
- 2 ¼ cups flour
- ½ cup cocoa powder
- 1 tsp baking soda
- ½ tsp salt
Filling:
- ¾ cup creamy peanut butter
- ½ cup butter, softened
- 1 ½ cups powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Make cookies: cream butter + sugars, add eggs + vanilla, then dry ingredients.
- Bake large, flat cookies at 350°F (175°C) for 10 min. Cool.
- Make filling: beat peanut butter + butter, add powdered sugar, vanilla, and salt.
- Sandwich filling between two cooled cookies.
Velvet Fork Twist
- Add ½ tsp espresso powder to the chocolate cookie dough — it deepens the chocolate without overpowering the peanut butter.
