Copycat Crumbl Confetti Cake Cookie

Cheerful, sweet, and kid-approved — these cookies mimic the birthday cake vibe with vanilla, sprinkles, and that signature Crumbl sugar-cookie chew.

Ingredients (12 cookies)

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg + 1 egg yolk

2 tsp vanilla extract

2 ½ cups all-purpose flour

2 tsp cornstarch

1 tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup rainbow sprinkles

Frosting

½ cup unsalted butter, softened

2 cups powdered sugar

2 tbsp heavy cream

1 tsp vanilla extract

Instructions

Preheat oven to 350°F (175°C). Line trays.

Cream butter + sugar until pale (3 minutes). Add egg, yolk, and vanilla.

Mix flour, cornstarch, baking powder, baking soda, salt separately. Add slowly.

Fold in sprinkles.

Scoop ¼-cup dough, flatten slightly. Bake 9–11 minutes.

Cool. Frost with vanilla buttercream, add more sprinkles.

Pro Tips

Use jimmies, not nonpareils, so colors don’t bleed.

Add ½ tsp almond extract for “bakery” birthday cake flavor.
