Copycat Crumbl Galaxy Brownie Cookie
This one’s pure nostalgia wrapped in glossy chocolate. The Galaxy Brownie Cookie is Crumbl’s tribute to the old-school cosmic brownies we grew up with — but richer, softer, and just a little more grown-up. You get that deep chocolate punch, dense brownie texture, and glossy ganache finish, all tied together with a sprinkle of those signature rainbow candy pieces that make it unmistakably “galaxy.”
Ingredients
For the Brownie Cookie Base:
½ cup unsalted butter, melted
1 cup granulated sugar
½ cup light brown sugar
2 large eggs
2 tsp vanilla extract
¾ cup cocoa powder (use Dutch-processed for deep flavor)
1 cup all-purpose flour
½ tsp baking powder
¼ tsp salt
½ cup semi-sweet chocolate chips (optional but adds richness)
For the Ganache Topping:
½ cup heavy cream
1 cup semi-sweet chocolate chips
1 tbsp butter (for sheen)
For the Decoration:
Rainbow candy chips or mini M&Ms
Instructions
Prepare the Base — In a mixing bowl, whisk together melted butter, sugars, eggs, and vanilla until glossy and smooth.
Add Dry Ingredients — Mix in cocoa powder, flour, baking powder, and salt until just combined. Fold in chocolate chips if using.
Bake — Scoop ¼-cup portions onto parchment-lined trays, flatten slightly, and bake at 350°F (177°C) for 9–11 minutes. You want the edges firm and the centers soft.
Cool & Prepare Ganache — Warm cream until steaming but not boiling. Pour over chocolate chips and butter, wait 1 minute, then stir until silky.
Top the Cookies — Spread a thick layer of ganache over cooled cookies and sprinkle with rainbow candies before it sets.

Chill the ganache for 5 minutes before spreading for that glossy, thick Crumbl-style look.
If you want a denser texture, refrigerate the dough 30 minutes before baking.
