Copycat Crumbl Raspberry Cheesecake Cookie

Ingredients

Cookie

  • ½ cup butter
  • ¾ cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 ½ cups flour
  • ½ tsp baking powder
  • ½ tsp salt

Cheesecake Topping

  • 8 oz cream cheese
  • ½ cup powdered sugar
  • 1 tsp vanilla

Raspberry Sauce

  • 1 cup raspberries
  • 2 tbsp sugar
  • 1 tsp lemon juice

Instructions

1. Bake cookies

Cream butter and sugar.

Add egg and vanilla.

Mix in flour, baking powder, and salt.

Scoop large cookies onto baking sheet.

Bake 350°F for 10–12 minutes.

Cool completely.

2. Make cheesecake topping

Beat cream cheese until smooth.

Add powdered sugar and vanilla.

3. Make raspberry sauce

Simmer raspberries, sugar, and lemon juice for 5 minutes.

Strain seeds if desired.

4. Assemble

Spread cheesecake topping over cookies.

Add a spoonful of raspberry sauce on top.

Tips

  • Chill cookies briefly before topping so frosting sets properly.
