Copycat Crumbl Salted Caramel Cheesecake Cookie
Ingredients
Cookie Base (Graham Style)
- ½ cup butter (softened)
- ½ cup brown sugar
- ¼ cup sugar
- 1 egg
- 1 tsp vanilla
- 1 ¼ cups flour
- ¼ cup graham cracker crumbs
- ½ tsp baking powder
- ¼ tsp salt
Cheesecake Layer
- 8 oz cream cheese (softened)
- ¼ cup sugar
- 1 tsp vanilla
Salted Caramel
- ½ cup caramel sauce
- pinch of sea salt
Instructions
1. Make dough
Cream butter and sugars.
Add egg and vanilla.
Mix in flour, graham crumbs, baking powder, and salt.
2. Bake
Flatten cookies slightly.
Bake at 350°F for 10–12 minutes.
Cool completely.
3. Make cheesecake layer
Beat cream cheese, sugar, and vanilla until smooth.
4. Assemble
Spread cheesecake layer over cookies.
Drizzle caramel sauce and sprinkle with sea salt.
Tips
- Chill before serving for best texture
- Don’t overload caramel or it becomes messy
- Use thicker caramel for better structure
