Copycat Patrick’s Star Berry Shortcake Pie

Ingredients

Pie Crust

  • 1 store-bought or homemade pie crust

Berry Filling

  • 1 cup mixed berries (fresh or frozen)
  • ¼ cup sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice

Cream Layer

  • ½ cup whipped cream or vanilla cream

Instructions

1. Cook filling

In saucepan, heat berries, sugar, cornstarch, and lemon juice.

Cook until thickened.

Let cool.

2. Prepare crust

Cut dough into small rectangles or circles.

Fill with berry mixture + small amount of cream.

Seal edges.

3. Bake

Bake at 375°F (190°C) for 12–15 minutes until golden.

4. Cool & serve

Let cool slightly before eating.

Tips

  • Don’t overfill or pies will leak
  • Let filling cool before assembling
  • Add cream lightly so it doesn’t melt out
