Copycat Recipe : Cinnamon Roll Cheesecake Cookie

This one’s more cheesecake than cookie — rich, creamy, and swirled with cinnamon sugar.

Ingredients:

Cookie base:

1 cup unsalted butter, softened 1 cup granulated sugar 2 large eggs 2 tsp vanilla 2 ¾ cups flour 1 tsp baking powder ½ tsp salt

Cheesecake layer:

8 oz cream cheese, softened ½ cup powdered sugar 1 tsp vanilla

Cinnamon swirl:

½ cup brown sugar 2 tbsp cinnamon 2 tbsp butter, melted

Instructions:

Make cookie base: cream butter and sugar, add eggs + vanilla, fold in dry ingredients. Make cheesecake filling: beat cream cheese, powdered sugar, and vanilla until smooth. Mix cinnamon swirl separately. Press cookie dough into a skillet (or ramekins for single-serve). Spread cheesecake overtop. Drizzle/swirl cinnamon mix through. Bake at 325°F (163°C) for 18–20 minutes.

Tip: Let it cool slightly before serving — the cheesecake layer sets better and is easier to eat.
