Copycat Recipe: Crumbl Pumpkin Cake Cookie
Pumpkin spice lovers, this is your cookie.
Ingredients
Cookie Base
1 cup butter, softened 1 cup sugar 1 cup pumpkin purée 1 egg 2 cups flour 1 tsp baking soda 1 tsp cinnamon ½ tsp nutmeg ½ tsp cloves
Frosting
4 oz cream cheese 2 cups powdered sugar 1 tsp vanilla 2 tbsp milk
Instructions
Beat butter + sugar. Add pumpkin and egg. Stir in dry ingredients. Scoop and bake 12–14 minutes at 350°F. Frost with cream cheese topping, sprinkle chocolate chips if desired.
💡 Tip: Let the dough chill for 30 minutes so the pumpkin doesn’t make it too sticky to shape.
