Copycat Starbucks Pumpkin & Pepita Loaf

Hearty, spiced, and built for coffee.

This loaf is dense and cozy, closer to banana bread than cake. Pumpkin is subtle, but the spices and pepitas make it distinctly fall.

Ingredients (1 loaf)

  • 1 ½ cups flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • 1 cup pumpkin purée
  • ½ cup sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla
  • ¼ cup pepitas (for topping)

Instructions

  1. Whisk dry ingredients. In another bowl, whisk pumpkin, sugars, oil, eggs, vanilla.
  2. Fold wet into dry until combined.
  3. Pour into greased loaf pan, sprinkle pepitas.
  4. Bake at 350°F for 50–60 min.

Velvet Fork Twist: Mix ½ cup crushed graham crackers into the batter — it gives the loaf a subtle crunch and makes it taste closer to pumpkin pie.
