Copycat Starbucks Raccoon Cake Pop
Moist, chocolatey, and almost too cute to eat.
The raccoon pop is all about texture: dense cake inside, smooth shell outside. The trick is chilling before dipping so they hold together.
Ingredients (12 pops)
- 1 box chocolate cake mix (baked + cooled)
- ½ cup chocolate frosting
- 12 lollipop sticks
- 12 oz milk chocolate candy melts
- White + dark chocolate melts (for decoration)
Instructions
- Crumble cake into fine crumbs. Mix with frosting until tacky.
- Roll into balls, chill 30 min.
- Melt milk chocolate, dip sticks, then insert into balls. Chill again.
- Dip in milk chocolate until coated.
- Pipe raccoon face details with white + dark chocolate.
Velvet Fork Twist: Stir 2 tbsp crushed Oreos into the cake mix before rolling — it gives a subtle cookie-and-cream texture that fits the “raccoon scavenger” vibe.
