Crumbl Review: Carlota de Limón Icebox Cake Cookie
Now this one surprised me. I’m not usually a lemon dessert person — I find they can easily go too sour or too artificial — but the Carlota de Limón Icebox Cake Cookie changed my mind.
It’s light, smooth, and balanced with a creamy lemon note that feels fresh rather than sharp. The texture is soft, and the topping adds that perfect silky layer that makes every bite taste like summer meeting fall.
The flavor is bright but not aggressive — think lemon pudding over buttery shortbread rather than lemon cleaner (which is often the problem with citrus desserts). The sweetness grounds it, and it finishes with a light, creamy aftertaste that leaves you refreshed rather than overwhelmed.
Texture-wise, it’s perfectly soft, with just enough structure to hold up to the topping. And that topping — smooth, tangy, sweet — ties it all together beautifully.
Would I get it again? Absolutely. Even as someone who doesn’t chase lemon flavors, I’d say this is one of the most balanced Crumbl lemon creations yet. It’s delicate, polished, and surprisingly addictive.
