Copycat Crumbl Andes Mint Brownie Cookie
Ingredients
Cookie Base
- ½ cup butter
- ¾ cup brown sugar
- ¼ cup sugar
- 1 egg
- 1 tsp vanilla
- 1 cup flour
- ½ cup cocoa powder
- ½ tsp baking soda
- ½ tsp salt
Mix-ins
- ¾ cup chocolate chips
- ½ cup chopped Andes mints
Instructions
1. Make dough
Cream butter and sugars until smooth.
Add egg and vanilla.
Mix in flour, cocoa powder, baking soda, and salt.
Fold in chocolate chips and Andes pieces.
2. Bake
Scoop thick cookies.
Bake at 350°F for 9–11 minutes.
Centers should stay soft.
Tips
- Slight underbake = fudgy texture
- Don’t overdo mint — Andes already balanced
- Let cool slightly so structure sets
