Copycat Starbucks Fox Cookie
Cute, simple, and very fall.
This cookie is more about the look than the flavour, but the shortbread base gives it that buttery crunch you expect. The key is keeping the icing smooth but not waxy.
Ingredients (12 cookies)
- 1 cup unsalted butter, softened
- ¾ cup sugar
- 1 egg
- 1 tsp vanilla extract
- 2 ½ cups flour
- ½ tsp baking powder
- ½ tsp salt
Icing:
- 2 cups powdered sugar
- 2–3 tbsp milk
- ½ tsp vanilla
- Gel food colours (orange, white, black)
Instructions
- Cream butter + sugar. Add egg + vanilla.
- Mix in flour, baking powder, and salt. Chill 30 min.
- Roll out, cut fox shapes, bake at 350°F for 10–12 min. Cool.
- Whisk icing until smooth. Separate, tint, and pipe.
Velvet Fork Twist: Add 1 tsp orange zest to the dough — it makes the cookie taste as bright as it looks.
