Copycat Crumbl Snickerdoodle Sandwich Cookie
Ingredients
Cookies
- ½ cup butter
- ¾ cup sugar
- 1 egg
- 1 tsp vanilla
- 1 ½ cups flour
- ½ tsp baking powder
- ½ tsp salt
Cinnamon Sugar
- 2 tbsp sugar
- 1 tsp cinnamon
Filling
- ½ cup butter
- 1 ½ cups powdered sugar
- 1 tsp vanilla
- 1–2 tbsp cream
Instructions
1. Make cookies
Cream butter and sugar.
Add egg and vanilla.
Mix flour, baking powder, and salt.
Form dough balls and roll in cinnamon sugar.
Bake 350°F for 10 minutes.
Cool completely.
2. Make filling
Beat butter until smooth.
Add powdered sugar and vanilla.
Add cream until fluffy.
3. Assemble
Spread filling on one cookie and top with another.
Tips
- Let cookies cool fully or filling will melt.
