Copycat Recipe: Mint Crunchin’ Cookie Parfait
Ingredients
Base
- 2 cups vanilla ice cream (softened)
Mint Sauce
- ½ cup white chocolate chips
- 1 tbsp butter
- ¼ tsp mint extract
- green food colouring (optional)
Cookie Layer
- 1 cup crushed chocolate cookies (Oreos)
Instructions
1. Make mint sauce
Melt white chocolate and butter together until smooth.
Stir in mint extract and colouring.
2. Prepare cookie layer
Crush cookies into chunky pieces.
3. Assemble layers
In a cup:
- Add a layer of ice cream
- Add cookie pieces
- Drizzle mint sauce
Repeat layers.
4. Serve
Serve immediately or chill slightly before eating.
