Copycat Recipe: Mint Crunchin’ Cookie Dipped Cone
Ingredients
Soft Serve Base
- 2 cups vanilla ice cream (softened)
Mint Chocolate Coating
- 1½ cups white chocolate chips
- 1 tbsp coconut oil or butter
- ¼ tsp mint extract
- ½ cup crushed chocolate cookies (like Oreos)
- green food colouring (optional)
Assembly

Instructions
1. Prepare coating
In a microwave-safe bowl, melt white chocolate chips and coconut oil in 20–30 second intervals, stirring each time until smooth.
2. Add flavour
Stir in mint extract and a small amount of green food colouring if desired.
3. Add crunch
Fold in crushed cookie pieces.
4. Cool slightly
Let coating cool for 2–3 minutes so it thickens slightly but is still pourable.
5. Assemble cones
Scoop softened ice cream into waffle cones.
6. Dip
Dip the top of each cone into the coating, letting excess drip off.
7. Set
Let coating harden for 1–2 minutes before serving.
Tips
- Don’t add too much mint extract — it’s strong
- Keep coating slightly thick so it sticks properly
- Work quickly so coating doesn’t harden
- Use chunky cookie pieces for better texture
- Freeze cones briefly if ice cream is too soft
